PIZZA SOUP

INGREDIENTS
- Servings: 6
- 1 c. chopped onion
- 1 c. chopped green sweet pepper
- 1 c. sliced fresh mushrooms
- 1 c. halved, sliced zucchini
- 1 - 141/2 oz. can beef broth
- 1 - 141/2 oz. can Italian
- style tomatoes, cut up
- 1 - 8 oz. can pizza sauce
- 4 oz. fully cooked smoked
- sausage links, thinly sliced
- 1/2 tsp. Italian seasoning
- 1/2 c. shredded mozzarella cheese
DIRECTIONS
In a medium saucepan, combine onion, sweet pepper, mushrooms, zucchini
and 1/4 c. broth. Bring to boiling;
reduce heat. Simmer covered for 5
minutes. Stir in the remaining broth, the undrained tomatoes, pizza sauce, sausage and seasoning. Simmer for 5-10
minutes more or until the vegatables
are tender. Top each serving with
cheese. Makes 6 servings.
