PIZZA SOUP

Ingredients

  • 1 c. chopped onion
  • 1 c. chopped green sweet pepper
  • 1 c. sliced fresh mushrooms
  • 1 c. halved, sliced zucchini
  • 1 - 141/2 oz. can beef broth
  • 1 - 141/2 oz. can Italian
  • style tomatoes, cut up
  • 1 - 8 oz. can pizza sauce
  • 4 oz. fully cooked smoked
  • sausage links, thinly sliced
  • 1/2 tsp. Italian seasoning
  • 1/2 c. shredded mozzarella cheese

Directions

  • In a medium saucepan, combine onion, sweet pepper, mushrooms, zucchini
  • and 1/4 c. broth. Bring to boiling;
  • reduce heat. Simmer covered for 5
  • minutes. Stir in the remaining broth, the undrained tomatoes, pizza sauce, sausage and seasoning. Simmer for 5-10
  • minutes more or until the vegatables
  • are tender. Top each serving with
  • cheese. Makes 6 servings.
