PLANKED EGGS
Planked Eggs
INGREDIENTS
- 2 cups chopped leftover meat
- 1 cup medium white sauce
- 2 cups mashed potatoes, warmed and put in piping bag
- 4 slices buttered toast
- Medium white sauce
- 4 Lightly poached eggs
- 2 T butter
- 2 T flour
- 1 cup Milk
DIRECTIONS
Oven to 350
Medium White Sauce: Over low heat - Melt butter , addd flour and blend thoroughly. Add milk and heat slowly, stirring constantly till mixture thickens.
Stir meat into white sauce till combined.
Set toast on cookie sheet. Pipe potatoes around edge of toast, making a border, put 1 egg on each. Bake 10 minutes
