  • 2 cups chopped leftover meat
  • 1 cup medium white sauce
  • 2 cups mashed potatoes, warmed and put in piping bag
  • 4 slices buttered toast
  • Medium white sauce
  • 4 Lightly poached eggs
  • 2 T butter
  • 2 T flour
  • 1 cup Milk


  • Oven to 350
  • Medium White Sauce: Over low heat - Melt butter , addd flour and blend thoroughly. Add milk and heat slowly, stirring constantly till mixture thickens.
  • Stir meat into white sauce till combined.
  • Set toast on cookie sheet. Pipe potatoes around edge of toast, making a border, put 1 egg on each. Bake 10 minutes
