2 cups rum or vodka
2 cups sugar
Pour 2 cups rum or vodka into a screw-top quart jar and screw on tight lid.
Add 2 cups sugar and shake until dissolved.
Fill jar with beach plums to top and store in cool dark place.
Every few days jar should be turned gently.
After about six to eight weeks cordial is completed and the contents can be strained and bottled.
Liquid will be a clear dark red.
