Poached Eggs in Tomato Sauce
1-14 Ounce crushed tomatoes
2 Cloves garlic chopped
Some fresh basil cut into thin strips
Salt and black pepper to taste
1 Tablespoon oil
Sauté garlic in a skillet for 2 minutes and then add crushed tomatoes, salt and pepper and continue cooking 15 minutes to thicken sauce. Using a big spoon, make 4 depressions in sauce and crack eggs into them. Cook eggs to desired doneness.

The creaminess of the yolk offsets the acid in the tomato sauce.
