  • 2 Tbsp olive oil
  • 1 clove garlic
  • 1/2 c pancetta, cubed or bacon, sliced
  • 1/2 c finely chopped onions
  • 2 stalks of celery, diced
  • 1 c diced carrots
  • 1 tsp fresh rosemary, finely chopped or 1/4 tsp dried
  • 2 cubed chicken breasts
  • 1/2 c white cooking wine
  • 1 (14 oz) can chopped tomatoes
  • 2 bay leaves
  • 1/2 tsp sugar
  • 1 (14 oz) can cannellini or light red kidney beans, rinsed and drained



Here is a recipe from Nigella Lawson's Express Meals that we had for dinner tonight. This recipe is with the changes as I made it, you can look up the original on FoodNetwork. It was ready in about 30 minutes. I sprinkled ours with Romano cheese and we had toasted sourdough to go with it. Delicious!
