Pollo alla Verona

Serves 4 | Prep Time 10 min. | Cook Time 20 min.

Ingredients

4 chicken breasts
olive oil
1 cup sliced mushrooms
15-20 medium shrimp
1 TBS chopped shallots
4 oz. dry Marsala wine
3 TBS cold butter
6 oz. chicken stock
1 lb. pasta, prepared


Pound chicken breasts to 1/2" thick. In skillet heat olive oil over medium heat. Season chicken with salt & pepper. Lightly flour chicken. Saute both side of chicken - 4 min. on each side.



Add mushrooms and stir to combine. Toss in shrimp. Add shallots and wine. Turn up heat to med/high. Add butter and chicken stauck. Allow to reduce for 8-10 minutes.



Serve over pasta.
