POPPY SEED CAKE

Ingredients

  • 1 box vanilla instant pudding
  • 1 cup hot water
  • 1 box yellow cake mix (I often use a lemon cake mix)
  • 4 eggs
  • 1/2 cup oil
  • 1 teas almond extract
  • 1-2 Tbl poppy seeds

Directions

  • In small mixing bowl, dissove vanilla pudding in hot water. In larger bowl, mix cake mix, vanilla pudding mixture, eggs, oil, almond extract and poppy seeds. Beat 2 to 3 minutes. Pour batter into greased bundt pan. Bake in oven at 350 degrees for 50 minutes..

Notes

This was a very popular cake years ago when I first got married. My daughter still likes it today. The recipie calls for a yellow cake but I often make it with a lemon cake mix.
