Pops Rice Puddding

Serves 8 | Prep Time | Cook Time

Ingredients

1/2 cup water
1 cup carolina rice
1 cup sugar
2 quarts milk
3 inch cinnamon stick - split
1 inch vanilla bean - split

3 eggs
3/4 cup milk
1 tsp vanilla extract


Heat to boil,reduce to simmer for 1 hour,stirring occasionally with whisk.



Beat together:


3 eggs


3/4 cup milk


1 tsp vanilla extract



Slowly add egg mixture to the hot rice mixture in a slow,steady stream,whisking constantly to prevent curdling.



Heat only until first bubble appears,then remove from heat and pour into serving dishes.
