INGREDIENTS
- Cooking Time: 60 min
- Servings: 4
- Preparation Time: 15 min
- 4 thick pork chops
- 1/4 t garlic powder
- Dash of cayenne pepper
- Salt and pepper
- 1/2 c uncooked rice
- 1 large onion - 1/2 sliced into rings and half small diced
- 3 scallions, cut on the diagonal into 1/2" pieces.
- 1 lemon or 1 orange
- 1 can beef broth
- 1 t Worcestershire sauce
- Non-stick cooking spray
DIRECTIONS
Preheat oven to 325.
Cut fat off of chops and melt in skillet over med-low.
Pat chops dry and sprinkle with salt and pepper on both sides.
Brown chops on both sides, adding the garlic powder and cayenne while cooking.
Remove chops from pan and saute the diced onion in the drippings until translucent.
Spray covered baking dish with non-stick spray.
Pour rice into baking dish and stir in the cooked onion.
Arrange the chops over the rice.
Cover the chops with the onion rings, then cover the onion rings with the citrus rings.
Pour the broth and Worcestershire over the top.
Cover and bake for one hour.

I fancied myself to be like Nancy Drew or Agatha Christie as a kid, so it was appropriate that the first dinner I ever made was out of the Nancy Drew Cookbook. It was very basic and pretty bland, so I have changed it over time, but it still makes me chuckle whenever I pass the title in my recipe collection.
