Pork Chops and Spanish Rice
4 pork chops
2 tablespoons vegetable oil
1 tablespoon bacon grease
1 large can whole tomatoes, chopped
1 medium can V8 juice
1 small green pepper, chopped
1 small onion, chopped
2 cups instant rice
Garlic salt and pepper, to taste
1. Heat oil and bacon grease in a large skillet over medium-high heat; add pork chops and brown on both
sides. Remove chops from skillet.
2. Add green pepper and onion to the skillet; sauté 2 to 3 minutes. Stir in chopped tomatoes (with juice).
Add instant rice and enough V8 to create enough liquid to cook the rice; stir in. Stir in garlic salt and
pepper. Return chops to skillet. Cover and cook on low until chops are done. Add more V8 if needed.
