PORK TENDERLOIN

Ingredients

  • 6 pork tenderloins (about 1 1/2lbs)
  • 1/4 cup flour
  • 1 tsp salt
  • 1/4 tsp pepper
  • 1 egg, beaten
  • 3/4 cup dry bread crumbs
  • 1 tsp paprika
  • Sauce:
  • 3/4 cup chicken broth
  • 1 tbls flour
  • 1/4 tsp dry dill weed
  • 1 dash paprika
  • 1 squirt lemon juice
  • 1/2 cup sour cream
  • Butter or margarine for browning

Directions

  • Mix flour salt and pepper together
  • Mix breadcrumbs and paprika together
  • Coat tenderloins in flour mixture
  • Dip in egg
  • Then in breadcrumbs
  • Chill 1 hour, single layer only
  • Brown in butter or margarine
  • Place on platter in 300 degree oven to keep warm
  • In pan used to brown add flour, more butter if needed, chicken broth, dill weed, paprika and lemon juice.
  • Bring to boil to thicken
  • Add sour cream
  • Pour over meat and serve
