POTATO CHOWDER

Ingredients

  • 3 Tb. butter
  • 1 c. chopped onion
  • 3 c. diced peeled potatoes
  • 3/4 c. chopped celery
  • 3/4 c. grated carrot
  • 2 tsp. salt
  • 1/8 tsp. pepper
  • 3 c. water
  • 3 c. milk
  • 1/2 tsp. parsley flakes

Directions

  • Melt butter in lrg. saucepan. Add onion and cook 'til soft. Add potatoes, celery, carrot, salt, pepper and water. Simmer 'til all beg. are tender, about 15 min. Add milk and parsley. Heat just to boiling.
