- 3 c. grated or shredded raw potatoes
- 1/2 c. shredded onion or green onions
- 2 beaten eggs
- 2 tbsp. flour or potato flour
- 1 tsp. salt
- 3 tbsp. oil
- Mix all ingredients except oil. Use oil to grease skillet or griddle. When oil is hot drop potato mix by spoonfuls onto griddle. Spread batter slightly. Fry until brown, about 2 minutes each side. Serve hot with applesauce or sour cream. Keep latkes warm as more are fried. Makes about 15.
NotesI love to make latkes during Chanukah. they are definitely a special treat for my family!
