2 medium‐size potatoes; peeled, grated, and squeezed dry
1 medium onion, grated
2 Tbsp flour
1½ tsp baking powder
2 eggs, beaten
1 Combine everything and blend well.
2 Heat griddle over medium‐to‐medium‐high heat with approximately 3 Tbsp oil on it.
3 Depending on the size pancakes you want, use 2 to 3 heaping Tbsp for each one, pressing down firmly to about ¼‐inch thick.
4 Grill each side until golden brown (add more oil if necessary). Takes about 10 minutes total.
5 Serve with sour cream and little garlic salt on top.
