3 large potatoes, peeled, grated
1 onion, chopped
3 eggs whites, beaten
1 tsp salt
2 TB flour
1. Strain the potatoes to let juices drain off. May have to squeeze between paper towels. The potatoes will start to turn pink.
2. Put grated, strained potatoes into a bowl. Add eggs, salt, and flour. Mix well.
3. Drop by spoonfuls onto greased skillet. Turn when golden brown.
