1/2 lb. bacon, diced
1 med. onion
1 cup mayo
1 tbsp mustard
1/2 c. vinegar
1 tsp. salt
1/4 c. water
Dash of pepper
6 med. potatoes, cooked, peeled & cubed
parsley
Directions
Fry bacon until crisp.
Crumble.
Saute onions in bacon drippings until transparent.
Remove from heat.
Add mayo, mustard, vinegar, water, salt, and pepper.
Add potatoes and toss lightly.
Top with finely chopped parsley.
