POTATO SALAD

Ingredients

  • 1/2 lb. bacon, diced
  • 1 med. onion
  • 1 cup mayo
  • 1 tbsp mustard
  • 1/2 c. vinegar
  • 1 tsp. salt
  • 1/4 c. water
  • Dash of pepper
  • 6 med. potatoes, cooked, peeled & cubed
  • parsley

Directions

  • Fry bacon until crisp.
  • Crumble.
  • Saute onions in bacon drippings until transparent.
  • Remove from heat.
  • Add mayo, mustard, vinegar, water, salt, and pepper.
  • Add potatoes and toss lightly.
  • Top with finely chopped parsley.
