6 large potatoes, peeled and sliced thin 2 onions, finely chopped
1 carrot, grated 1 stalk of celery, diced
1 tsp. chopped parsley 5 c. of chicken broth*
2 tsp salt Dash of pepper
1 can evaporated milk
Cook all ingredients except milk in a large pot until all vegetables are tender. Then mash potatoes or beat with an electric mixer. Add evaporated milk and serve. This is great with a salad and garlic bread as a meal.
* May substitute for 5 chicken bouillons and 5 cups of water
