POTATO SOUP

Ingredients

  • 6 large potatoes, peeled and sliced thin
  • 2 onions, finely chopped
  • 1 carrot, grated
  • 1 stalk of celery, diced
  • 1 tsp. chopped parsley
  • 5 c. of chicken broth*
  • 2 tsp salt
  • Dash of pepper
  • 1 can evaporated milk
  • * May substitute for 5 chicken bouillons and 5 cups of water

Directions

  • 6 large potatoes, peeled and sliced thin
  • 2 onions, finely chopped
  • 1 carrot, grated
  • 1 stalk of celery, diced
  • 1 tsp. chopped parsley
  • 5 c. of chicken broth*
  • 2 tsp salt
  • Dash of pepper
  • 1 can evaporated milk
  • Cook all ingredients except milk in a large pot until all vegetables are tender. Then mash potatoes or beat with an electric mixer. Add evaporated milk and serve. This is great with a salad and garlic bread as a meal.
  • * May substitute for 5 chicken bouillons and 5 cups of water
