- 4 cups of chicken stock
- 2 cups of chopped onions
- 2 cups of chopped celery
- 1/2 cup of butter
- 6 large potatoes peeled and chopped
- 1/4 -1/2 teaspoon cumin
- Garlic to taste
- Salt and Pepper to taste
- 1 bay leaf
- Saute onions and celery in butter. If using fresh chopped garlic, saute with onions and celery as well. Mix with chicken broth. Add remaining ingredients except for the pepper. Simmer until potatoes are done. Mash a few of the potatoes. Add pepper just before serving.
- Garnish with chopped green onions and shredded cheese if you'd like.
NotesA basic Potato Soup recipe that my grandmother gave me years and years ago. Would also taste great with some cheese and cream added to it.
