6 medium russet potatoes
2 cups water
1 vegan vegetable bouillon cube
non-dairy milk to taste
Seasonings to taste:
Peel and dice potatoes and place in boiling water. Cook until fork tender and drain. Bring 2 cups fresh water to a boil and add soft potatoes into the water, along with bouillon cube. Add seasonings to taste. Using an immersion blender, blend potatoes until smooth and creamy. Add non-dairy milk to taste to achieve desired consistency.
Top with vegan bacon bits and seasonings to taste.
