Potato and Egg Pie

20 ounces frozen hash browns
1/3 cup vegetable oil
1 1/2 tablespoons fresh parsley, chopped
3/4 cup pepper jack cheese, shredded
3/4 cup swiss cheese, shredded
12 ounces bulk sausage, cooked,crumbled
4 ounces mushrooms, sliced
1/2 cup milk
4 eggs, beaten
1 teaspoon garlic salt
1/4 teaspoon pepper
4 thin tomato slices

Preheat oven to 425 degrees. In a bowl, combine the potatoes and oil; blend to coat. Press mixture into a 10" pie dish. Bake for 30 minutes or until golden brown; remove from the oven. Reduce the oven temperature to 350 degrees. Meanwhile in another bowl combine 1 tablespoon parsley and the remaining ingredients except the tomato slices; blend well. Pour into the potato crust. Bake for 25 minutes or until the eggs are set. Place tomato slices over the pie and top with the remaining parsley. Bake for 5-7 minutes longer.
