POTATO LATKES (HANUKKAH)

Ingredients

  • 3 large potatoes
  • 1/5 yellow onion
  • 2 eggs
  • 1 tsp salt
  • Dash black pepper
  • 1 tbsp matzoh meal

Directions

  • Use regular cuisinart blade to cut up the onion and set it aside
  • Use the shredder cuisinart blade to cut up the peeled potatoes
  • Strain both and mix together with eggs, matzoh meal, salt, pepper
  • Fry em up! Until brown
  • Can make up to 4 hours ahead of time – heat up right before serving at 375 for 5 min per side
  • Can freeze and then heat up in 375 degree oven for 8 min or so

These are the best basic latkes I have tried after many experiments
