POTATO SOUP

 

  • Cooking Time: 15-20 minutes
  • Servings: about 4 for us up to 6
  • Preparation Time: 10 minutes

Ingredients

  • 2 large Potatoes small dice
  • 1 can beef broth (or what ever you like)
  • 1/4 cup carrots
  • 1/4 cup frozen corn
  • 1/4 cup frozen Peas (optional)
  • salt to taste
  • pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 cup shredded cheese white or yellow
  • 1/4 cup milk
  • 2tablespoons butter
  • 1/4 cup lentels (optional)
  • 1/2 cup rice (optional)
  • Optional toppings Ideas
  • green onion
  • chives
  • sour cream
  • bacon
  • more cheese (our Favorite)

Directions

  • In a med pot combine everything except cheese, milk and butter.
  • add water until potatoes are covered. If using Rice add an aditional 1 cup of water or broth.
  • cook for 15 to 20 minutes until rice and potatoes are done
  • Add cheese, butter and milk, stir
  • For a thicker soup add flaked potatoes or instant potatoes. Left over mashed potatoes work very well also
  • Serve in bowl with your favorite toppings or as is.
