Potatoe and Broccoli
1 pound potatoes (diced bitesize)
3 tbl vegetable oil
4 tbl margarine/butter
1 small finely chopped onion
1 chopped red pepper
8 oz broccoli florets
1/2 tsp ginger
Cook potatoes in skillet in oil for 7-8 minutes until browned and tender.
Add butter, onion and red pepper. Cook for 2-3 minutes, stirring frequently.
Add broccoli and ginger and cook 2-3 minutes. Stir frequently.
Add salt and pepper to taste.
