Lightly grated rind of 1 lemon
1 lb sugar
1 level tsp mace
1/4 tsp salt
1 LB butter
1 lb flour
Grate lemon rind onto the sugar, mace, and salt. Then, mix with butter and sugar until light and creamy.
Add eggs, two at a time, beating well.
Then, add flour, mixing in lightly but fully.
Put mixture into well-greased paper-lined pans. (note: pan sizes are not indicated in this recipe)
Bake at 250 degrees for 1 1/2 hours, testing with straw toward the end of baking.
