Protein Packed Quinoa Lentil Veggie Salad

Serves 2 | Prep Time 5 | Cook Time 20

Ingredients

1 cucumber chopped
1 large tomato chopped
1 bell pepper
1/2 c cooked lentils
1/2 c quinoa cooked
1 cup of leafy greens
sprinkle of feta cheese (if not vegan)

Dressing:
1/4 c olive oil
1 garlic clove
juice of half a lemon
1 tbsp italian seasoning
1/4 tsp himalayan sea salt

OR...
1 serving of Lemony Garlic Tahini Dressing


Cook lentils and quinoa according to their directions and toss with rest of ingredients. Add celtic/himalayan sea salt to taste.

I love this recipe!! It keeps well, and is great cold or warm. It's a super simple and adaptable recipe that works great with any veggies you have laying around. It's hearty and super delish, my roommates couldn't even tell it was actually incredibly healthy!
