Why I Love This Recipe

I always use the thigh for two reasons, first the meat cooks with the bone for additional flavor and second because they are cheap.

Ingredients You'll Need

12 Dinner rolls
3 Chicken thighs
1/2 Onion, chopped
2 Garlic cloves, crushed
6 Ounce Can tomato paste
1 Tablespoon cider vinegar
3 Tablespoon prepared mustard
3 Tablespoon brown sugar
12 Lettuce leaves
1/4 Cup Italian dressing


Directions

Start by placing 3 chicken thighs in the bottom of a warmed crock pot. In a bowl, whisk together the tomato paste plus 2 cans worth of water, the cider vinegar, mustard, and brown sugar and add salt and pepper to taste. Add the chopped onion and crushed garlic to the sauce. Pour sauce over chicken breasts. Set crock pot to high and cook for 6 hours. When chicken is finished in the crock pot, scoop it out into a bowl and using 2 forks, pull chicken apart. Scoop some sauce from the crock pot and add until reaches your desired wetness. Serve on bread with Italian dressing.
