PUMPKIN BARS

Ingredients

  • Crust:
  • 1/2 c. flour
  • 1/2 cup pecan meal
  • 1 stick butter
  • Filling:
  • 1 lg. instant Jell-O pudding, butterscotch
  • 1 c. milk
  • 1 can pumpkin
  • 1 tsp. pumpkin pie spice
  • 1 tsp. cinnamon
  • 1 tsp. vanilla
  • Cool Whip

Directions

  • Crust:
  • Melt all together.
  • Press in a 13 x 9 dish.
  • Bake at 350 degrees for 10 to 12 minutes.
  • Cool completely.
  • Filling:
  • Whip all together, except Cool Whip, and pour over cool crust.
  • Top with Cool Whip.
  • Sprinkle crushed pecans on top.
