1 15oz can pumpkin puree (I bought Libby Brand... do not buy pumpkin pie mix)
2 2/3 cup sugar
3 3/4 cup flour
1 1/2 tsp salt
1/2 tsp cinnamon
1 cup chopped walnuts
2/3 cup water
baking powder 1/2 tsp
baking soda 1 tsp
Using a hand beater, beat eggs and sugar.
Add pumpkin puree, salt, cinnamon, baking powder, baking soda, and water. Beat into sugar / egg mixture.
Gradually add flour, be careful not to over-beat. Stir in walnuts.
Pour mixture into 2 greased and floured bread pans.
Bake at 300 degrees for an hour, or until a toothpick comes out every so slightly "wet". Enjoy!
