Serves Three standard loaves | Prep Time 20 Minutes | Cook Time 60 Minutes (approx.)


Pumpkin Bread

Sift together and set aside:

3 ½ cups all purpose flour
2 tsp. baking soda
1 tsp. salt
1 tsp. nutmeg
1 tsp. cinnamon

Mix the following well:

4 eggs
3 cups sugar
1 cup vegetable oil
2/3 cup water
2 cups pumpkin
1 cup chopped nuts (optional)

Add dry ingredients and mix well.

Bake at 350 for about an hour in well-greased and floured, standard sized loaf pans. Alternatively, you can use Pam for baking. (Ovens vary – so watch closely)

My awesome Mother-in-Law, Janie, has been making this for her family for many, many years. Scot, my husband, could not possibly make it through autumn and the holidays without his favorite pumpkin bread. Now my boys are just as addicted to this bread as their Daddy. Guess I'll be passing this on to MY daughters-in-law someday!

what size loaf pans you use and does it matter what kind of flour you use.

also, I made with fresh pumpkin: just cut pumpkin in half, remove stem, seeds and stringy bits, bake side down, cover with foil, for 1.5 hours at 375. When cooked, just scoop out flesh and mash!

This is amazing pumpkin bread! I made this for our family and friends and everyone said how moist and tasty they were! Thanks Heather (and Janie!)
