PUMPKIN BREAD

Ingredients

  • 2/3 c. vegetable oil (170 cc)
  • 2 2/3 c. white sugar (350 gm)
  • 4 eggs
  • 1-16 oz.can pumpkin (2 c. or 500 cc)
  • 2/3 c. water (170 cc)
  • 3 1/3 c. flour (400 gm)
  • 1/2 t. baking powder
  • 2 t. soda
  • 1 1/2 t. salt
  • 1 t. cinnamon
  • 1 t. cloves, ground
  • 2/3 c. nuts, chopped, pecans or walnuts (70 gm)

Directions

  • Cream oil and sugar; add eggs, pumpkin and water. Sift together flour, baking powder, soda, salt and spices; add to the pumpkin mixture. Stir in nuts. Pour into 2 - 2 qt. greased loaf pans. Bake at 350 degrees F. for 1 hour. Freezes well.
