Pumpkin Cheesecake Bars

Ingredients

3 cups graham cracker crumbs
1/2 cup sugar
3/4 cup butter -- melted
6 eggs -- beaten
2 1/4 cups sugar
19 ounces cream cheese
2 cups pumpkin
1/2 cup sugar
1 teaspoon cinnamon
1/2 cup milk
3 egg yolks -- save whites
1 package Knox Gelatin
1/4 cup hot water
1/4 cup sugar


Mix first three ingredients together and put in a 9 x 13 pan.


Beat together the next three ingredients and pour over first layer. Bake at 350° for 40 minutes or until set in middle.


In a medium saucepan, combine the pumpkin, sugar, cinnamon, milk and egg yolks. Cook, stirring constantly until thick. Remove from heat. Add the gelatin that has been dissolved in the 1/4 cup hot water. Cool. Beat egg whites until stiff. Add 1/4 cup sugar. Fold into cooled pumpkin mixture. Pour over 2nd layer. Top with whipped cream.
