Why I Love This Recipe

This recipe is from Grandma Sally Klenk's kitchen. It is a traditional, favorite Thanksgiving/Christmas staple.


Ingredients You'll Need

3 eggs
1 cup sugar
3/4 cup flour
2 tsp cinnamon
1/2 tsp nutmeg
1 cup nuts (pecans)
2/3 cup pumpkin
1 tsp lemon juice
1 tsp baking powder
1 tsp ginger
1/2 tsp salt

Filling:
2 pkgs (3 oz) cream cheese
1/2 tsp vanilla
4 T margarine
1 cup powdered sugar


Directions

Beat eggs at high speed for 5 minutes. Gradually beat in sugar, pumpkin, lemon juice, flour, baking powder, cinnamon, ginger, nutmeg, and salt. Spread onto a well-greased and floured 15x10x1 inch pan. Top with nuts. Bake at 375° for 15 minutes.


Turn out onto a towel sprinkled with powdered sugar. Start at the narrow end of the towel and roll towel and cake together. Cool completely then unroll.


Combine all ingredients for the filling and beat until smooth. Spread on the cake; again, roll the cake (without the towel) and wrap in foil and chill. When ready to serve, slice the rolls into 1-inch or less slices and enjoy!
