Pumpkin Mashed Potatoes with Fennel and Spinach

 


INGREDIENTS

  • Cooking Time: 15 minutes
  • Servings: 6
  • Preparation Time: 5 minutes
  • 10 red potatoes, cubed
  • 1/2 fennel bulb, diced
  • 2 minced garlic cloves
  • 30 oz pumpkin puree
  • 10 oz blanched spinach
  • 1 cup buttermilk
  • salt
  • pepper

DIRECTIONS

Boil potatoes until tender; drain and mash. Meanwhile, saute fennel until tender, 7 minutes; add garlic and cook 1 minute. Stir fennel mixture, pumpkin puree, spinach and buttermilk into potatoes. Season with salt and pepper; serve hot.
