PUMPKIN NUTTY MUFFINS

Ingredients

  • 3 c. flour
  • 2 t. baking soda
  • 2 t. baking powder
  • 1 t. cinnamon
  • 1 t. salt
  • 4 eggs
  • 1 1/2 c. granulated sugar
  • 1-15 oz. can pumpkin
  • 1 1/2 c. vegetable oil
  • 1 c. chopped nuts
  • Topping:
  • 1/4 c. all-purpose flour
  • 1/4 c. granulated sugar
  • 2 T. butter
  • 1 t. cinnamon

Directions

  • In a medium bowl, sift together flour, baking soda, baking powder, cinnamon and salt; set aside.
  • In a large bowl, beat together eggs, sugar, pumpkin and oil until smooth.
  • Add dry mixture to pumpkin mixture and stir well. Fold in nuts.
  • Grease muffin tins or line with paper.
  • Fill muffin tins 3/4 full with batter; set aside. In a medium-mixing bowl, combine topping ingredients, mixing well with a fork.
  • Spoon a small amount of topping on each muffin. Bake at 400° for 17-20 minutes. Makes 24 muffins
