Pumpkin Pancakes With Cinnamon Syrup

Ingredients

1/3 cup of pumpkin
1/2 tsp. cinnamon
1/4 tsp. cloves
1/4 tsp. ginger
1/4 tsp. nutmeg

When mixing batter make sure it isn’t too smooth. Don’t over mix. Use butter or Crisco on your griddle.

Cinnamon Syrup

1/2 cup of sugar
1 Tbs. cornstarch
1 tsp. cinnamon
1 cup apple cider
1 Tbs. lemon juice
2 Tbs. margarine or butter


In small pan combine sugar, cornstarch, and 1 tsp. cinnamon. Blend well. Stir in apple cider and lemon juice. Cook over medium heat until mixture comes to a boil and thickens. Remove from heat. Add butter and stir until melted. Keep warm
