PUMPKIN PECAN PIE

Ingredients

  • Pumkpin Layer
  • 1 unbaked pie crust
  • 1c. pure pumkpin
  • 1/3c. sugar
  • 1 large egg
  • 1tsp pumpkin pie spice
  • Pecan Layer
  • 2/3c. light corn syrup
  • 1/2c. sugar
  • 2 large eggs
  • 3tbsp butter, melted
  • 1/2 tsp vanilla extract
  • 1 1/2c. pecan halves

Directions

  • Preheat oven to 350 F.
  • Place pie crust in 9in pie pan.
  • Pumpkin layer:
  • Combine pumpkin, sugar, egg, and pumpkin pie spice in medium bowl, stir well. Spread over bottom of pie shell.
  • Pecan layer:
  • Combine corn syrup, eggs, butter, and vanilla extract in same bowl. Stir in nuts. Spoon over pumpkin layer.
  • Bake for 50 min or until knife inserted in center comes out clean. Cool on wire rack.

Notes

Pumpkin pie and pecan pie are my favorites and I love that this pie is both in one! My friends and family want me to make this all the time and I love to because it is so easy to make and clean up is a breeze. Its also delicious!
