- Pumkpin Layer
- 1 unbaked pie crust
- 1c. pure pumkpin
- 1/3c. sugar
- 1 large egg
- 1tsp pumpkin pie spice
- Pecan Layer
- 2/3c. light corn syrup
- 1/2c. sugar
- 2 large eggs
- 3tbsp butter, melted
- 1/2 tsp vanilla extract
- 1 1/2c. pecan halves
- Preheat oven to 350 F.
- Place pie crust in 9in pie pan.
- Pumpkin layer:
- Combine pumpkin, sugar, egg, and pumpkin pie spice in medium bowl, stir well. Spread over bottom of pie shell.
- Pecan layer:
- Combine corn syrup, eggs, butter, and vanilla extract in same bowl. Stir in nuts. Spoon over pumpkin layer.
- Bake for 50 min or until knife inserted in center comes out clean. Cool on wire rack.
NotesPumpkin pie and pecan pie are my favorites and I love that this pie is both in one! My friends and family want me to make this all the time and I love to because it is so easy to make and clean up is a breeze. Its also delicious!
