Pumpkin Soup (Butternut Squash)

This is an Australian recipe, which is fairly uncommon here in the US. Here the best pumpkin I've found for it is the butternut squash. I've made this recipe many many many times, and still love it!

  • Cooking Time: 30-40
  • Servings: 8
  • Preparation Time: 20
  • 1 lg pumpkin
  • 4 med potatoes
  • 1 Med Onion
  • 2 tbsp chicken stock powder
  • salt
  • pepper
  • milk as desired for taste
  • 2 cloves garlic
  • 1/2 tsp nutmeg
  • 1 sm sweet potato
  • water

DIRECTIONS

Instructions:


1. Cut all vegetables and throw into pot


2. Put enough water to boil the vegetables


3. Boil until soft, and then mash (I use my pressure cooker, which cuts the time way down)


4. If desired, blend the soup to get a smoother texture


5. Serve with cream and grated cheese
