PUMPKIN SOUP

Ingredients

  • 1 Lg Onion
  • 1/2 Cup Butter
  • 16 oz. Canned Pumpkin
  • 1 Bay Leaf (whole)
  • 1/2 tsp Nutmeg
  • 1/2 Tsp Curry
  • 4 Cups Chicken Broth
  • 2 Cups Half & Half

Directions

  • CHOP and SAUTE 1st 2 ingredients.
  • Add the rest of ingredients to pan and simmer on LOW heat for 15 minutes.
  • In a blender, add 2 cups Half and Half (can puree if want).
  • DO NOT BOIL, heat.
  • NOTE: This recipe is very flexible depending on desired taste. Add seasonings to YOUR liking.
