Pumpkin Spice Cupcakes
1 pkg spice cake mix (1 pound)
1 can mashed pumpkin (15 oz)
1/2 cup egg substitute
1 cup sifted powdered sugar
1/4 tsp grated orange rind
2 Tbsp orange juice
Preheat over to 350
Use paper muffin liners in muffin tin.
combine first 3 ingredients in large bowl, beat with mixer on low until blended. Beat at medium for 2 mins. Fill 24 miffin liners.
Bake for 18 mins or until they spring back when touched. Let cool completely.
Combine powdered sugar orange rind and orange juice in small bowl and whisk until smooth. Dip tops of cupcakes in glaze.
