Ingredients You'll Need
2 inches leek of both green and white sliced
3 tsp olive oil
1/2 cup +1 tbsp. milk 2%
1/2 cup sour cream or Greek yogurt( plain)
4-5 eggs
salt and pepper
4 oz bacon, cooked and crumbled
1 puffed pastry sheet
Directions
Fit dough into a pie plate 9 " Trim edges and crimp together pieces if needed.
Refrigerate for 30 minutes
Heat oil in a large skillet over low heat.
Add leeks, and a pinch od salt
Sauté until very soft and caramelized.
Remove from heat and cool.
While crust chills and onions caramelize, mix milk and sour cream together in a medium bowl.
Whisk in the eggs.
Season with salt and pepper and stir to combine.
Preheat oven to 350F.
Spread the leeks mixture evenly over bottom of the chilled pie shell.
sprinkle the bacon and cheese on top of leeks.
Pour the egg mixture over top.
Place quiche in oven.
Bake until puffed and golden, about 25-30 minutes.
Remove from oven and cool slightly before serving.
