Quiche aux Fruits de Mar
2 tbsp minced green onion
1 large clove garlic, minced
1/2 cup of finely sliced mushrooms
2 tbsp sherry
1 tbsp olive oil
1 tbsp butter
1 cup cream
1 tbsp tomato paste
3 large eggs, beaten
1 tablespoon fresh parsley
1.5 cups cooked crab/lobster/shrimp mix
.5 cup Swiss cheese
salt and pepper
Spray nine inch spring form pan with cooking spray.
Preheat oven to 375 degrees.
Mix first 6 ingredients and saute until tender. Remove from heat.
In a mixing bowl combine eggs, cream, tomato paste, and parsley-whisk until well blended.
Add in sauted items and meat- combine well.
Pour mixture into partially cooked pastry shell and top with cheese.
Bake in preheated oven for 25-30 minutes- until quiche has puffed up and is brown.
Let cool 10 minutes before cutting.
