Quick Chicken Cassiatore
5-6 chicken thighs
1 medium onion, chopped
1 medium green pepper chopped
2 cloves garlic, chopped
1 - 28 oz. can crushed tomatoes
1 - 8 oz. can tomato sauce
1 tsp. oregano
1 tsp. salt
1/2 tsp. pepper
1 tsp. celery seed
1/2 tsp. rosemary, crushed fine
2 bay leaves
1/2 c. white wine
Boil chicken thighs until done. Cool enough
to remove skin and tear into bite size pieces.
Heat a couple tblsps. olive oil in dutch oven.
Add onion, green pepper and garlic and cook until
softened. Add in chicken and cook several more
minutes. Add in rest of ingredients and simmer
stirring frequently for 20-30 minutes.
Pairs Well With
We like this over egg noodles. You could use any
kind of chicken pieces that you like. I prefer the thighs. :)
