Quick Chop Suey
2 cups cubed cooked pork, veal, chicken or beef
1/2 cup sliced onion
1/2 cup sliced green pepper
1 cup diagonally sliced celery
1 can (1 pound) bean sprouts, drained
1 can (5 ounces) water chestnuts, drained and sliced
1 can (5 ounces) bamboo shoots, drained
1 cup liquid reserved from canned vegetables
1 Tablespoon cornstarch
1/2 teaspoon salt
2 Tablespoons soy sauce
Mushrooms and almonds (optional)
Brown meat quickly in a little butter.
Add onion, green pepper and celery; cook 3 minutes.
Combine reserved liquid from vegetables with cornstarch.
Add to meat, stirring until thickened.
Add bean sprouts, water chestnuts, bamboo shoots, salt and soy sauce. (Add mushrooms or almonds if desired.)
Heat, serve with rice.
