Quick Hamburger and Potato Casserole
2 2/3 Cups instant potato flakes
1 1/2 Cups sour cream
1 Cup water
1 lb. ground beef
1 Tbls. dried minced onion
1 can (15 ozs.) tomato sauce
1 can (12 ozs.) corn, undrained
1 tsp. salt
1/4 - 1/2 tsp. pepper
1/8 tsp. oregano
1/2 Cup shredded cheese
In ungreased 9 X 13 baking dish blend potato flakes with sour cream and 1/2 Cup water. Mixture should be crumbly. If not, add more potato flakees.
Pat firmly into bottom of pan. Brown beef. Add dried onion, remaining 1/2 Cup water, tomato sauce, corn, salt, pepper, and oregano.
Spoon beef mixture over potatoes. Sprinkle with
cheese. Bake at 350 degrees F for 25 - 30 minutes.
