QUICK POTATO SOUP
- 1-16 oz package frozen hash brown potatoes- the cube style
- 1 quart heavy cream
- 2 TBLE margarine or butter
- 2-3 cups water
- Sour cream
- Crumnbled, Crispy bacon
Put all ingredients (except sour cream and bacon) into a pot. Simmer on low til potatoes are ender. Sauce should thicken by itself. If not, you can add 1/8 to 1/4 c potato flakes to thicken it. If you use regular milk instead of heavy cream, it will not thicken unless you (a) cook it till the potato falls apart or (b) add potato flakes. You may cut and peel your own potatoes, but of course, then it wouldn't be as quick, would it?
Serve with sour cream and crumbled bacon.
