QUICK RED LENTIL COCONUT SOUP
Quick Red Lentil Coconut Soup
Just a really quick throw together soup that tastes really great.
INGREDIENTS
- Cooking Time: 45
- Servings: 4
- Preparation Time: 10
- 1 cup red lentils
- extra virgin olive oil*
- 3 cups organic vegetable broth
- 3-4 pressed garlic cloves
- 2 organic carrots, sliced thinly
- 2 tsp turmeric
- 2 tsp cumin
- 1 tsp paprika
- 1 tsp freshly ground black pepper
- 1 tsp sea salt ( or Kosher)
- 1 can 14oz coconut milk
- 1 15 oz can tomatoes with roasted fire chili's
DIRECTIONS
Place your lentils in a pot with your broth. Bring to a boil then lower heat and put everything else in with the lentils. Loosely cover and simmer about 45 minutes until lentils are the consistency you prefer.
** depending on my mood I like to crisp the carrots up a bit before putting them in with the lentils. ( that is what the olive oil is for)
