Quick Red Lentil Coconut Soup

Serves 4 | Prep Time 10 | Cook Time 45

Ingredients

1 cup red lentils
extra virgin olive oil*
3 cups organic vegetable broth
3-4 pressed garlic cloves
2 organic carrots, sliced thinly
2 tsp turmeric
2 tsp cumin
1 tsp paprika
1 tsp freshly ground black pepper
1 tsp sea salt ( or Kosher)
1 can 14oz coconut milk
1 15 oz can tomatoes with roasted fire chili's


Place your lentils in a pot with your broth. Bring to a boil then lower heat and put everything else in with the lentils. Loosely cover and simmer about 45 minutes until lentils are the consistency you prefer.



** depending on my mood I like to crisp the carrots up a bit before putting them in with the lentils. ( that is what the olive oil is for)
