QUICK RED LENTIL COCONUT SOUP

Ingredients

  • 1 cup red lentils
  • extra virgin olive oil*
  • 3 cups organic vegetable broth
  • 3-4 pressed garlic cloves
  • 2 organic carrots, sliced thinly
  • 2 tsp turmeric
  • 2 tsp cumin
  • 1 tsp paprika
  • 1 tsp freshly ground black pepper
  • 1 tsp sea salt ( or Kosher)
  • 1 can 14oz coconut milk
  • 1 15 oz can tomatoes with roasted fire chili's

Directions

  • Place your lentils in a pot with your broth. Bring to a boil then lower heat and put everything else in with the lentils. Loosely cover and simmer about 45 minutes until lentils are the consistency you prefer.
  • ** depending on my mood I like to crisp the carrots up a bit before putting them in with the lentils. ( that is what the olive oil is for)

Just a really quick throw together soup that tastes really great.
