QUICK AND TASTY SALMON PATTIES

Quick and Tasty Salmon Patties

these are not in the least bit pretentious, but tasty just the same.

INGREDIENTS

  • 2 (6 oz) pouches boneless, skinless salmon
  • 2 sleeves crackers, divided
  • 1/2 Tbsp concentrated lemon juice
  • 1 egg
  • 1/2 tsp kosher salt
  • oil for frying

DIRECTIONS

Take 3/4 of one sleeve of crackers and coarsely crush and add to a medium size bowl. Add salmon (do not drain), egg, and lemon juice, kosher salt. Mix well and let set about 15 minutes to allow crackers to soften. Crush the remaining crackers to a fine meal. Heat oil over medium heat. Shape patties approximately 2 1/2-3 inches across. Coat in the remaining crackers. Cook until golden brown on both sides. Drain on paper towels.
