Quickie Quiche

Serves 1 | Prep Time | Cook Time

Ingredients

4 egg whites
1/4 c. fat free cottage cheese
1/8 cup shredded soy cheese
2 tbp. Chunky Mild Salsa
Chopped Spinach
Chopped Turkey Bacon
2 oz. or 1/4 c. Almond Milk
half a toasted English Muffin


1. Place toasted English Muffin on bottom of a bowl


2. In a separate bowl, mix all ingredients pour on top of English muffin and heat


for 1 minute on high or until done, use a toothpick to check


Got more time available, say a Sunday? Bake at 350 degrees for 45 minutes. No need to toast the muffin
