  • 4 egg whites
  • 1/4 c. fat free cottage cheese
  • 1/8 cup shredded soy cheese
  • 2 tbp. Chunky Mild Salsa
  • Chopped Spinach
  • Chopped Turkey Bacon
  • 2 oz. or 1/4 c. Almond Milk
  • half a toasted English Muffin


  • 1. Place toasted English Muffin on bottom of a bowl
  • 2. In a separate bowl, mix all ingredients pour on top of English muffin and heat
  • for 1 minute on high or until done, use a toothpick to check
  • Got more time available, say a Sunday? Bake at 350 degrees for 45 minutes. No need to toast the muffin
