Quinoa Salad

Serves | Prep Time | Cook Time

Ingredients

1 c. quinoa
1 bouillion cube
2 cp water
1 can black beans, rinsed
1 c. frozen corn, rinsed, or 1 can corn without sugar, or fresh corn sliced off the cob
1 large sweet pepper (whichever color you like)
1/2 bunch of parsley or cilantro, chopped
salt and black pepper to taste
drizzle of olive oil
1-2 lemons or limes, to taste

Mix throughly, add quinoa, mix some more, and ENJOY!


Toast quinoa in olive oil with salt and a bouillion cube for about a minute.


Add 2 c. water, cover and simmer until water is absorbed. Cool before adding to the veggies.


Add: black beans, corn, peppers, fresh herbs, salt and black pepper, olive oil.


Mix.


Squeeze 1-2 lemons or limes, to taste


Mix throughly, add quinoa, mix some more, and ENJOY!
